1.梅干菜一小碗,挑去杂质,用清水快速洗两遍,然后用清水充分泡发

2.带皮五花肉一块,刮去杂毛,清洗干净

3.五花肉入凉水锅中,水开后倒入少许料酒

4.取一盘,盘中倒少许酱油,五花肉煮到5成熟时捞出入酱油盘中

6.平底煎锅中倒入少许油,将五花肉肉皮朝下煎出表皮起小泡泡

15.一小勺淀粉入碗中,加入少量清水、鸡粉、少量盐溶化

小窍门&温馨提示
梅干菜用清水迅速洗两遍,去除掉表面的浮尘;可以用炖肉的方法将五花肉块炖至8成熟,然后捞出,炖肉汤与梅干菜混合好,蒸出来的梅菜味道更香,我这是省事了,直接放到卤肉锅中了;猪皮蘸上酱油再入锅中煎,更易上色。油花四溅,我没等煎到位就夹出来了,家庭版的梅菜扣肉不用这么专业也可以噢,要的就是简单好操作对吧;蒸好的梅菜肉汁倒在炒锅中,略微调味,加点水淀粉成芡汁,淋在梅菜扣肉上面,使菜品更加鲜亮、有味道。
